Gujarati Khakra Recipe

The land of gourmets, garba, gathiya and Gandhi…yes that’s Gujarat ! With Amitabh Bachan endorsing the the states tourism and appealing with the tag line "ek din to guzariye Gujarat mein" (Spend at least a in Gujarat), we are tempted to take a look at the flamboyance of the state, it's people and obviously it's cuisine.

Gujarat boasts of a rich culture and heritage. Though, with changing times the state has prospered and is on the path of development, its people are strongly bound by their ancient value system.

The state has been blessed with a rich tradition of performing arts. The various song, dance and drama forms practiced in Gujarat are famous throughout India. The famous garba (dance type) is something every Gujarati will break into when expressing happiness.

Simple, practical, sweet, Gujarati cuisine truly reflects the heart of the state and it's people.
Gujarati cuisine is one of the the oldest culinary treasures of India and is primarily vegetarian.  

Today let us all celebrate the flamboyance of Gujarati food with Khakra recipe. 
Khakra is the staple snack always available in every Gujarati household. It's light and crispy so much that you just can't stop with one.


  1. Whole wheat flour (gehun ka atta) - 1  1/2 cup
  2. salt to taste
  3. Oil - 1 1/2 tbsp


  • Combine the flour, salt and 1 tbsp of oil in a bowl and knead into a soft dough using enough water. Keep aside for 15 minutes.
  • Divide the dough into 4 equal portions and roll out each portion into very thin rounds with help of a little flour.
  • Cook each khakhra lightly for a few seconds on both sides on a tawa (griddle).
  • Apply a little oil and cook again on a slow flame until crisp using little pressure with help of a cloth.
  • Remove from the flame and allow to cool.
  • Store in an air-tight jar.

Kheema Spring Rolls Recipe

Spring rolls may have Chinese origin but when they reached India they were adopted by the Indians & Coloured in the flavours of India. So we made them spicier, tangier, crispier & of course fried! Just the way we love it!

This dish is loved by people across all age groups, be it my grand ma, my mom, me, or my nephew! Spring rolls are just so yummm... Today I was driving back from office while it was drizzling. Rain and Long drive are great accompaniments, Trust me! And where these two get the partnership of a roadside dhaba's fried items (Street food) they get even better & or should I say just the BEST!

And this time I took Kheema Spring roll from the  Dhaba (Motel). Later I was wondering why not prepare for every one & enjoy in the evening & so I am here with Kheema Spring rolls.

Ingredients for filling of Kheema Spring Rolls
Minced Meat (Beef or Mutton/lamb) 250 gram
Onion, finely chopped 1cup
Green chillies, chopped 4
Ginger paste 1 tsp. 
Garlic paste 1 tsp. 
Salt to taste
Black pepper  ½ tsp
Coriander leaves, finely chopped 1 Small Bowl
Lemon juice 2 tsp. 
Tandoori masala 1 tsp.
Turmeric pinch
Garam Masala 1 Pinch
Red chili flakes or powder 1 tsp
Oil 1 tbsp
Ingredients for dough of Kheema Spring Rolls:
Flour  2 cups
Ghee  6 tbsp
Salt  ½ tsp
Water  to knead

Additional Ingredients

Oil                                                                    For deep frying
Green Coriander Chutney                                 As needed

Method of Making Kheema Spring Rolls / Recipe:

Heat a pan and add butter. When it starts to sizzle, add the onions and let them fry whilst stirring until translucent. Add the remaining ginger and garlic, stir for a minute then add the minced meat. Stir-fry it whilst breaking it up using a wooden spoon, until the meat changes color to brown.

Add the red chili flakes or powder, tandoori masala, black pepper, Turmeric & Garam Masala & cook together with the meat until all the moisture from the meat is gone. Adjust salt and chili. 

Make sure you dry the mixture as much as possible. Once done, add the lemon juice and sprinkle coriander leaves with chopped green chillies. You can smoke it for a bbq aroma/flavor. The filling of kheema spring rolls is ready for use.

Now lets mix all the ingredients of the dough. knead into a soft dough & keep aside for about an hour.
Divide the dough into small portions & roll them on a rolling board.

Now roll the soft rotis around the kheema by placing it in the center. You need to carefully seal the ends, else the filling comes out..

Now heat oil in a pan and deep fry the kheema rolls till golden brown. Take a plate and place tissue papers on it. remove the fried kheema rolls on this plate.

This helps remove excess oil from the kheema rolls. Finally take a sharp knive and cut the rolls into 2 inch spring rolls.

Serve hot with Green Chutney and win accolades.
